A pot is a filter, not a flavour.
Volume and tone controls are load and a low-pass corner.
A 250 kΩ pot loads the pickup more than a 500 kΩ one. That loading damps the resonant peak and shaves the top end. It is measurable, and it is not a matter of taste.
The tone control adds a capacitor to ground through a variable resistor. Turned down, it moves a low-pass corner down through the audible range. Turned fully up, it is nearly out of the circuit.
The practical consequence: a bright pickup with a 250 kΩ pot may read as warm, and the same pickup with 500 kΩ may read as harsh. Both descriptions are about the wiring, not the pickup.
